Scarr Pimentel: Can we curse or no? You got ridiculed a lot for opening up a deep dish pizzeria in New York.

Emmett Burke: We still do. It's sacrilege.

Scarr Pimentel:When you told me the first time, I was like, wow, that's actually really fucking cool. I was like, I would love to see this happen.

Emmett Burke: That's right, man. You got to represent. I mean, opening up any business in New York is an achievement on its own. Right?

Scarr Pimentel: The people that say that it's easy are the ones with a lot of finances behind them. Either they're born rich or convince someone that has a lot of money to invest in business. Yeah, because it's not easy. No, it's not easy. It's not easy.

Emmett Burke: All one of the better decisions we both made was to start small. I think a lot of people try to get a big space and fill it that way, but with us, I think we focused on the fundamentals, work out all the kinks, kind of learn the business a little bit.

Scarr Pimentel: A lot of people think we want to open up in these small spots to piss 'em off. Like they say, Rome wasn't built in a day.

Emmett Burke: That's right.

Scarr Pimentel: Brick by brick.

Emmett Burke: Yeah. I think you and I have always gotten along because the quality of what we're doing is the most essential paramount thing versus anything else. I think a lot of people try to build business on profit margin or whatever, where I think you and I just try to create a good product.

Scarr Pimentel: Great product, good community. Can't complain. Very fortunate. Especially with a lot of competition out there.

Emmett Burke: Yeah. No shortages of pizza competition.

Scarr Pimentel: No.

Emmett Burke: That's what it's all about.

Scarr Pimentel: So how do you feel about all these pizzerias opening up the last couple years

Emmett Burke: I mean, hopefully they're making good pizza. I think that's the whole idea, right? I mean, there's a lot of hype out there, but I don't know. I think the cream rises at the top.

Scarr Pimentel: I think goggles will cut this thing up.

Emmett Burke: There's a lot of old school spots, but we've kind of established a community and people who have a, like-mindedness with what we're doing.

Scarr Pimentel: You can't help others unless you help yourself first and then you help people around you.

Emmett Burke: It's more organic that way anyways, you know.

Scarr Pimentel: I come from a family of hustlers. We all got to, they taught me from a young age to hustle. You got to work hard.

Emmett Burke: Yeah. We've always treated people the way that we'd want to be treated.

Scarr Pimentel: Surround yourself with good people always, you know. 

Emmett Burke: Yeah. We got plenty more.

Scarr Pimentel: I'm completely stuck. He could eat a whole pie by himself. Nobody eats more pizza, burgers and hot dogs than him, all day.
