MAX: I have no idea where this s**t is going.
SQUARE: Opening the new location, running the other three, dealing with us, like, you guys okay?
JACK: [laughs]
NOAH: Max, Jack, and myself are the three minds behind Ggiata. It's a classic East Coast inspired Italian deli here in Los Angeles. We opened our first location in Melrose Hill in 2021. We have since opened in West Hollywood, Venice Beach, and soon to be Highland Park. What feels the most exciting to me about Highland Park is that, for the first time, we're going to be able to welcome people into a Ggiata dining room. And have 25 plus people sitting, eating, and enjoying [themselves] in person, rather than ordering at a counter, taking your stuff to-go, and eating it somewhere else.
JACK: Operationally speaking, I think—we've now had three stores open. We've learned a lot at each of those stores about what makes them work well. And as we think about opening new stores we try to apply those learnings to make the next store run even better. One of the things we're excited about here is really just the space of the kitchen. We have the largest hood here. We have the most refrigeration and working area here. Being able to just run the kitchen maximally effective is going to be I think a huge opportunity for us.
MAX: This is kind of a little bit of a homage to diners. Also, we wanted it to feel a little bit like a place that you can sit at a bar stool or at a counter and get some breakfast and get out pretty quick. [Truly] sit there and get a sandwich served to you. I think it's all around like customer experience here because we haven't really had the opportunity to do that much at some of the other locations.
MADDY: He will cave on an idea before the other two do because I just know how to make him say yes to something. He's my brother. I'm Maddie. My older brother is Jack who's one of the co-founders of Ggiata. I do all of their digital marketing. I was working as an archaeologist in construction and I was doing little Tik Tok Trends about what it was like being a woman in construction. My brother had been watching them and every time I'd get one that got some virality he would be like—
MADDY to JACK: Yeah I'm talking about you. I'm actually talking about you in a nice way.
MADDY: I just started like making videos for them and started working and I was like time to pay me.
SQUARE: So, when are you guys going to quit? I’m just kidding. I was just trying to break the ice.
