So The Russell is a story about growing up on the farm and bringing some of those heritage pieces, cooking with wood fire, I wanted to make a rustic and warm environment with minimal concern about the operation side. We have about 25 employees, and The Russell could see anywhere from 200 to 500 people a day. The productive workdays are what make us successful and Square for Restaurants is one of the best tools for that.
Honestly, the easiest part about the pandemic was using the Square software to help create my curbside orders. Square online is the most important part of our business. Sometimes we unlock the door and we have over 250 box lunches. Like in the flip of a switch, we could add double the business hours, we could add openings and caterings.
Some of the most important things to running a great restaurant is getting a great metric. When we started using the data from our Square system to make direct emailers, we saw a direct return on investment. Whenever we opened our second restaurant. All of that marketing and stuff we were able to take onto our new concept. We were able to really translate our look that we created and duplicate it there.
Whenever you have numbers and data in one place, you can efficiently do your job on a daily basis. I can have a cup of coffee in the morning and really map out my day with Square per restaurant and the data that it provides. We couldn't ask for a better partner in business.
