Ryan Prellwitz: Our harvest for grapes is in the fall. I always describe it as family visiting from out of town, you love to see it come and you love to see it go.
I'm Ryan Prellwitz. I'm the owner here at Vines and Rushes Winery located in Ripon, Wisconsin.
Square AI is really helping me to leverage the data that's already preexisting from many years, dig into it and really gain a better understanding of where our business is at and where we need to go.
We have a lot of space for consumers, people that have come in and spend an entire day with us. Around 200 public facing things a year, a lot of live music and dinners and classes.
The thing we've been talking about most is staffing, and that's one of the huge cost centers of every business. We have these peak times of the day, 13-14 people on all at the same time. And then we have slow times of the week where, you know, one person front of house that handles everything.
Square AI is really helping me to construct the data that you want to see in the way that you want to see it. "Give me an analysis of July and August Saturday nights in 2025 versus July and August Saturday nights in 2024." When you're running the business optimally, from a staffing level, is huge.
We added on Woodfired Neapolitan style pizza. We do a 48 hour ferment on our dough. The challenge is you have to be planning ahead a fair amount. There's just so much data that we had access before, but now it's just faster and easier to dig in and get like total counts for this week or this specific day. "How was that in comparison to last year on the same weekend?" It's a lot more conversational and with Square AI, those pieces are a lot more accessible because now I'm able to dive better and easier into the data.
