When Head Chef Ed Borromeo and his team sought to enhance their operational efficiency while maintaining their high standards of service, they turned to Square’s Restaurant Point of Sale for a comprehensive solution.
The Challenge
Operating under The Ambassadors hospitality group, which manages multiple unique venues in Byron Bay, Casa Luna faced the complex challenge of running both a sophisticated dining venue and a vibrant nightlife destination. During evening service, the restaurant transforms from a Mediterranean-inspired dining space offering tapas and shared plates into an energetic nightclub drawing inspiration from hotspots like Ibiza and Mykonos.
This dual identity created unique operational challenges. The venue needed to smoothly transition from managing table service, coursing, and dining payments to handling high-volume beverage service and quick transactions during nightclub hours. They also needed a system that could work across The Ambassadors’ other venues, including Underworld, Playground, and Otherworld, each offering distinct entertainment experiences in Byron Bay’s Arts & Industrial Estate.
The Solution
Casa Luna implemented a comprehensive Square solution in October 2024, including:

We run four stations: two bar and two floor stations. The two floor stations then come into the bar for the late night higher volume aspect. We take table side payments or bar payments, people can order with the floor staff for dinner or come in and order at the bar if they aren’t seated for dining. Everything runs super smooth across all areas”

Square’s flexibility also stretched to their mobile events and catering. The portability of the battery powered Square Terminal allows them to take payments on the go.
Being mobile, at different locations and often huge headcounts, we needed to be far more efficient and simple. On the flip side we then utilised the extensive in detail POS system for a more complex and up market cocktail bar & restaurant for Casa Luna.”

The Impact
Since implementing Square’s solutions, Casa Luna has seen improvements in their operations. The integrated system has streamlined their service flow across both dining and nightclub services, from order taking to payment processing. This has been particularly valuable during the venue’s evening transformation, when the space shifts from restaurant service to hosting events like their popular Latin Thursdays, featuring salsa and bachata dancing, and Saturday Club Culture nights showcasing house music.
