Charles Bililies owns Souvla — a hip restaurant in San Francisco’s Hayes Valley neighborhood that serves up spit-fired Greek sandwiches as well as out-of-this-world fries and frozen Greek yogurt. Inspired by the neighborhood souvlaki joints found throughout Greece, Souvla is constantly bustling. In fact, the restaurant was recently featured on the Today Show for being on the forefront of what’s called the “fine casual” dining movement.
Needless to say, Charles is a busy man. But Square’s new Dashboard app helps him keep a pulse on how things are going at the restaurant, even when he can’t physically be there. 7:00 a.m. First order of business? Check yesterday’s sales.
8:00 a.m.
On the way to the shop, Charles looks at his top-selling items. That way he knows what to pick up from the market. More fennel for the wildly popular chicken salad it is!
10:00 a.m.
Before the restaurant opens for the day, he preps his team by sharing information like the day’s expected volume based on last week’s sales. Thursdays are always a big day for the lunch rush.
2:00 p.m.
He heads out to the market from the restaurant to pick up smallwares for the restaurant. He checks to see how sales are doing while he is away.
3:00 p.m.
Finally, a moment for a meal. While eating a late lunch in the park, Charles takes a look to see how busy the lunch rush was. As expected, it was a good day for the lamb sandwich.
