How it started
Would you believe us if we told you one of Dublin’s culinary hotspots has its roots in…energy regulation? Well, allow us to introduce Brother Hubbard. Early in his career, Garrett Fitzgerald spent his days working in the public sector and the rest of his time cooking, a passion he picked up from his parents. He liked his job, but a ‘what if?’ lingered – what if he swapped corporate for cafés? – until he and his partner James decided to take the leap. The co-owners launched a coffee-and-cake-focused café to a warm reception, steadily adding lunch, breakfast, brunch and dinner, along with new locations and a cookbook. With that evolution came a challenge: how to maintain the excellent quality they’d become known for while managing multiple restaurants.
How it’s going
